Ingredients
- Icing:
- 2 cups sugar
- 5 egg yolks (retain whites)
- 1 stick butter
- 1/2 c. shortening
- 2 c. all purpose flour
- 1 tsp. baking soda
- 1 c. buttermilk ( 1 tbsp.lemon juice to 1 c. milk)
- 2 c. coconut
- 1/2 c. pecan pieces
- 1 tsp. vanilla
- 8 oz. cream cheese
- 1 stick butter
- 1 box powdered sugar
- 1 tsp. vanilla

Preparation
Step 1
Cream first 4 ingredients. Add the remaining ingredients. Fold in the beaten egg whites. Cook at 350 degrees for 30-35 minutes.
For icing: Spread coconut on top.
Buttermilk can be made by putting 1 tbsp. lemon juice or vinegar in 1 cup milk.
