  • 2 ¼ cups blanched almonds
  • 1 ½ cups sugar
  • 2 ½ cups flour
  • Salt
  • 2 tsp. grated lemon peed
  • 2 eggs, slightly beaten
  • 4 tbs. diced and softened butter
  • 2 tbs. heavy cream

Step 1

2 ¼ cups blanched almonds
Grind almonds with 1 tbs. sugar. Combine almonds, flour, salt, and lemon peel. Mix well. Stir in remaining sugar, the eggs, and the butter and mix well. Knead dough. Add cream, 1 tbs. at a time. Roll pieces and shape into cylinders. Cut into ½ inch pieces and bake at 350 degrees for 20 – 25 minutes.
