Ingredients
- 2 1/4 cups self-rising cornmeal mix (Washington or Martha Washington brand)
- 1 can cream of corn
- 3/4 cup sugar
- 1/2 stick butter (melted)
- 1 egg; slightly beaten
- 3/4 cup milk
- 2 Tbsp. vegetable oil

Preparation
Step 1
Put 2 Tbsp. of oil in an 8x8 or 9x9 baking pan and place into oven while pre-heating to 400 degrees. Combine first 6 ingredients in a mixing bowl, mix until batter is smooth. Remove hot oiled baking pan from oven, pour batter into hot pan. Bake for 30 minutes, let rest for 10 minutes prior to serving.
