Ingredients
- 1 3/4 c flour
- 2 1/4 tsp baking powder
- 1/2 tsp salt
- 1/3 c shortning
- 2/3 c sugar
- 3/4 tsp lemon rind
- 2 eggs, beaten
- 1 1/4 c riped bananas, mashed
Preparation
Step 1
Sift together flour, baking powder, and salt. Cream together shortning, sugar and lemon rind; add bananas and eggs. Beat the flour mixture into the creamed mixture in 3 parts until smooth. Fold in nuts if desired.
Bake at 350 degrees for 55 minutes or until cake tester inserted into middle comes out clean.
Cool on rack before cutting.
