  • 1 1/2 cups firmly packed light brown sugar
  • 1/2 cup heavy whipping cream
  • 1 T. light corn syrup
  • 1/8 t. salt
  • 2 T. butter
  • 1 cup coarsely chopped pecans
  • 1/2 t. vanilla extract

Step 1

1. Line a rimmed baking sheet with wax paper, and coat with nonstick cooking spray. Set aside.
2. In a 2-quart, heavy stainless-steel saucepan, combine brown sugar, whipping cream, corn syrup, and salt over medium heat, stirring constantly until sugar dissolves. Cook, stirring occasionally, until mixture reaches 236 degrees on a candy thermometer (about 6 - 8 minutes.)
3. Remove mixture from heat, and place butter in center of mixture (do not stir). Let stand until mixture reaches 150 degrees on candy thermometer. Using a wooden spoon, stir in pecans and vanilla; stir constantly until candy begins to thicken (4 - 5 minutes).
4. Working quickly, drop by rounded tablespoons onto prepared baking sheet. Let stand until firm.
