- 7 medium-size potatoes, peeled and quartered
- Salt to taste
- 1/2 lb butter
- 1/2 cup whipping cream
- 1/2 cup cream cheese
- 1/2 cup grated Parmesan cheese
- Paprika

Step 1
Preheat oven to 400 degrees. Peel the potatoes, cut into quarters, and place in a large saucepan filled with water. Bring to boil. Simmer for about 20 minutes until tender. Do not overcook.
Drain the water. Mash or put the potatoes through a ricer. Place in a large mixing bowl or a mixer. Add salt, butter, whipping cream and cream cheese and mash thoroughly. Place potato mixture in a casserole dish. Sprinkle with Parmesan and paprika to taste.
Bake at 400 degrees for approximately 30 minutes, or until the top is golden and crispy.
