Ingredients
- 2 pounds ground meat
- 1 large onion, chopped
- Plain Greek yogurt (to replace 2 envelopes Ranch dressing mix)
- 1 envelope taco seasoning mix (to taste)
- 1 (16-oz) can black beans, undrained
- 1 (16-oz) can pinto beans, undrained
- 1 (16-oz) tomato wedges undrained, chopped
- 1 (16-oz) can (Shoe Peg) corn
- 1 (20-oz) Ro-tel
- 2 cups water

Preparation
Step 1
Brown the beef and the onion together, stirring until the ground beef is crumbly; drain. Stir taco mix and yogurt into meat and then add remaining ingredients and water and simmer for 2 hours.
Note: Top each serving of soup with shredded cheese and sour cream (or more Greek yogurt) if desired.
May also serve with tortilla chips.
