Ingredients

  • 1 tbsp butter
  • 2 small cloves garlic, mined green onions, chopped
  • 1 tbsp flour milk
  • 2/3 cup chicken or vegetable stock
  • 4 oz salmon flavoured cream cheese (1/2 the container)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 12 oz Fettuccine
  • 1 cup frozen peas
  • 2 tbsp fresh chives or parsley

Step 1

In small saucepan melt butter over medium heat; cook garlic and onions, stirring occasionally, for about 3 mins or until onions are softened. Sprinkle with flour; cook, stirring for about 2 minutes. Pour in milk and stock; cook, stirring for 5 minutes, or until thickened slightly. Stir in cheese until melted, Season with salt and pepper.

Meanwhile, in large pot of boiling salted water, cook fettuccine noodles for approx 8 minutes. Then add the peas and cook until noodles are a la dente. Drain well and toss with sauce. Sprinkle with chives or parsley.

Note: The original recipe called for herbed cream cheese, but I've always used the smoked salmon. Asparagus can be substituted for peas. The amount of milk can be cut down and replaced with more chicken stock.
