Ingredients

  • 2 very large whole wheat tortillas
  • 10 oz lean ground turkey (½ of a 20 oz pre-package container)
  • 1 small can chopped green chilis
  • 2-3 thick slices of onion, chopped
  • ½ package taco seasoning
  • Salt and pepper, or fajita seasoning
  • ½ can enchilada sauce (mild, medium, or hot)
  • 2 cups low or reduced fat shredded cheese of your choice
  • Olive oil

Step 1

This dish assembles like lasagna and easily doubles. For a double recipe, use a long baking dish or a small foil roasting pan.

Spray a deep pie dish with cooking spray and place one tortilla shell in the pie dish.

Drizzle a couple tablespoons of olive oil in a pre-heated skillet. Sauté the chopped onion until translucent. Add the turkey and continue to separate with a spoon. Add more olive oil if needed. Season with salt and pepper, or the fajita seasoning. Cook until meat is cooked through. Add the green chilis and taco seasoning – stirring to combine.

Layer ½ of the turkey mixture on the tortilla shell. Drizzle with ½ of the enchilada sauce and cover with 1 cup of cheese. Cover with the remaining tortilla shell and repeat the layers.

Bake at 350° for about 30 minutes. Cut pizza style and serve.


Additions: sliced black olives, slice jalapeno peppers – fresh or canned, diced bell pepper. Also, add a layer of refried beans before the meat.
