1 Heat oil in large pot, saute onions for 2 minutes.

3 Bring to a boil.
4 Add potatoes, carrots, and chicken.
5 Simmer until vegetables are done, about 30 minutes.
6 Thicken with cornstarch if you like a thicker stew.
