Ingredients

  • 1 (5-6#) beef tenderloin, trimmed
  • 2 tsp kosher salt
  • 1 tsp coarsely ground pepper
  • 3 tbs evoo, divided
  • 14 slices pancetta
  • wax paper
  • 2 tbs fresh rosemary, chopped
  • kitchen string

Preparation

Step 1

P.reheat oven 425*. Sprinkle tenderloin with salt and pepper. Brown in electric pan in2 tbs evoo 5 minutes on each side or until well browned. Cool 5 minutes. On wax paper place string cut to tie around meat.
Arrange half of pancetta on wax paper over string. Place tenderloin on pancetta, arrange remaining slices on top and tie in place. Sprinkle with garlic and rosemary. Transfer to aluminum foil lines broiler pan and rub with remaining 1 tbs evoo.
Bake 30 minutes or until pancetta is crispy. Let stand 10 minutes before slicing.
