  • Bulgur wheat:
  • Olive oil
  • 1 cup good marinara sauce or quality tomato puree – get the good stuff
  • Fresh garlic
  • Onion
  • 1 small zucchini
  • 1 small yellow squash
  • 1 baby eggplant
  • 2-3 Roma tomatoes
  • 1-2 long red bell peppers (the narrowest you can find will do)
  • 2 T shaved parmesan cheese
  • Fresh thyme
  • Salt and pepper

Step 1

Lightly grease the pan with olive oil, then cover the bottom of the pan with the tomato sauce. Shave, as thinly as possible, some garlic and onion to suit your taste and drop over the top of the sauce. Drizzle a little olive oil over the sauce and sprinkle with some salt and with 1 teaspoon of fresh thyme leaves.

Slice the vegetables into 1/16 to 1/8 inch thick round slices. Alternate the vegetables, overlapping them to cover the sauce. Sprinkle with salt and pepper, and the shaved parmesan cheese. Lightly drizzle some olive oil over the vegetables and then repeat with another layer of vegetables. Top with salt, pepper, more fresh thyme, and olive oil.

As Remy did in the movie, cover with a piece of parchment paper, cut to fit the pan. Bake in a preheated oven, 375 °F, for 45-50 minutes. Let rest for about 10 minutes. Cut an appropriate serving and place on top of a small serving of cooked bulgur wheat.

Pour a glass of red French wine and start the movie…Bon Appetite!
