Flourless Chocolate Cake with Glaze

Ingredients
- For Cake:
- 12 oz bittersweet or semisweet chocolate - chopped
- 3/4 c. (1 1/2 stick) butter cut into pieces
- 6 large eggs - separated
- 12 T. sugar
- 2 t. vanilla
- For Glaze:
- 1/2 c. whipping cream
- 1/2 c. dark corn syrup
- 9 oz. bittersweet or semisweet chocolate finely chopped

Preparation
Step 1
*Make Cake*
1. preheat oven to 350
2. butter a 9 inch spring form pan or waxed paper - pam it- wrap outside of pan with foil.
3. stir chocolate and butter in heavy saucepan over low heat until melted and smooth - remove from heat - cool stirring often
4. using an electric mixer beat egg yolks and 6 T. sugar in a large bow until thick and pale (@ 3 minutes)
5. fold chocolate mixture into yolks - then fold in vanilla
6. in another bowl beat egg whites until soft peaks form - add 6 T. sugar - beating until firm peaks
7. fold whites into chocolate mixture in 3 additions
8. pour into pans
9.bake until top is puffed and cracked - tester comes out with crumbs @ 40 minutes. cool on rack in pan - cake will fall.
10. take out of pan - flip and take off wax paper
*Make Glaze*
1. bring cream and corn syrup to simmer in a pan
2. remove from heat - add chocolate and whisk until smooth
*Assemble*
spread 1/2 glaze over cake - freeze for 3 minutes - spread remaining glaze - chill until firm @ 1 hour
