Ingredients
- 1 cup Hot Salsa
- 15 oz Black Beans
- 14 oz Diced Tomatoes
- 2 cups shredded light Cheddar cheese
- 3/4 cups uncooked brown rice - cooked

Preparation
Step 1
Cook rice as normal.
Mix all ingredients, excluding 1/2 cup cheese. Spray 9 x 13 pan and pour in mixture. Sprinkle remaining cheese on top.
Bake at 350 for 30 minutes. Let rest for 10 minutes, then serve
