Ingredients

  • 1 cup Hot Salsa
  • 15 oz Black Beans
  • 14 oz Diced Tomatoes
  • 2 cups shredded light Cheddar cheese
  • 3/4 cups uncooked brown rice - cooked

Preparation

Step 1

Cook rice as normal.

Mix all ingredients, excluding 1/2 cup cheese. Spray 9 x 13 pan and pour in mixture. Sprinkle remaining cheese on top.

Bake at 350 for 30 minutes. Let rest for 10 minutes, then serve
