DIRECTIONS FOR THE PORK BELLY
1. Trim the thick fat cap off the top of the belly and season with salt and pepper.
2. In a hot sauté pan, brown the belly on all sides and move to a warm baking dish.
3. With the pan still hot, deglaze with the red wine.
4. Add in the thyme, garlic and onion. Bring to a simmer and pour over the belly.
5. Cover baking dish tightly and place in a 300 degree oven.
6. Braise belly for about two hours. Pork should be soft to the touch.
7. When pork is cooked, remove from the baking dish and place on a cold dish and cover with plastic wrap.
8. Place another dish on top of the covered pork and weigh down with a heavy can or comparable weight.
9. Place in refrigerator until fully cooled and firm.
10. Remove pork and trim to an even square shape. Set aside for assembly.

DIRECTIONS FOR THE MUSHROOMS
1. Sautee mushrooms in butter until slightly softened and season with salt and pepper.
2. Hold warm until ready to assemble dish.
