Ingredients

  • Dry ingredients:
  • 2 C. AP flour (or white wheat/pastry whole wheat flour)
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 tsp. fresh grated nutmeg
  • Wet ingredients:
  • 2 eggs, beaten
  • 1/4 c. whole milk yogurt, vanilla or plain
  • 4-5 (depending on size) VERY ripe bananas, mashed well
  • 2 tsp. real vanilla extract
  • 8 tbs. melted butter, slightly cooled
  • 1 c. packed dark brown sugar
  • 1/3 c. sugar
  • optional: 1/2 c. toasted chopped pecans
  • raw sugar & flaky salt for sprinkling
  • optional: oatmeal for sprinkling over top

Preparation

Step 1

Preheat oven to 350.

Grease and flour (or use bakers release spray) a 9x5 loaf pan. Sprinkle the bottom and sides generously with raw sugar, shaking off excess.

Sift together the dry ingredients or whisk together well making sure everything is incorporated.

In separate bowl beat eggs. Stir in yogurt, mashed bananas, cooled melted butter, vanilla and sugars until well mixed.

Fold dry ingredients into wet, mixing just until dry ingredients are completely incorporated being careful not to over mix. Gently fold in nuts if using.

Pour batter into prepared loaf pan and sprinkle top generously with raw sugar and a little flaky salt. Scatter oats down the center if using. Bake for 60-75 minutes or until top is golden brown and toothpick inserted comes out without wet batter. Let cool for ten minutes then run a butter knife or bamboo skewer around the edges to loosen and turn out on to a baking rack to cool.
