Ingredients

  • 1 large head lettuce, leaves separated and torn in pieces
  • 1 lb. asparagus, cut into 1 1/2 inch pieces, cooked tender-crisp and chilled
  • 1 1/2 cups sliced mushrooms
  • 1 small red onion, finely chopped
  • 1 ts. chipped fresh parlsey or cilantro
  • 1/4 cup rice wine vinegar
  • 1/4 cup chicken stock
  • 1 tbs. soy sauce
  • 3 tbs. oil
  • 1 tsp. sesame oil
  • 2 tsp. finely copped fresh ginger root
  • Toasted sesame seeds

Step 1

In a salad bowl, combine lettuce, asparagus pieces, mushrooms, onion, and parsley. Set aside.

In a bowl whisk together the vinegar, chicken stock, and soy sauce. Gradually whisk in oils and stir in the ginger root. Spoon oil mixture over the asparagus mixture and toss to coat; sprinkle with sesame seeds and serve.
