Ingredients
- 1 lb Beef (You can use either ground beef or whole beef cut into small pieces)
- 1 T. Salad oil
- 1 onion chopped
- 1 green pepper, chopped
- 1 16 oz stewed tomatoes
- 1 6 oz can tomato paste
- 1 tsp salt
- 1/2 tsp oregano
- 1/4 tsp garlic powder
- 2 medium zucchini cut into 1/4 inch slices

Preparation
Step 1
Cook onion, pepper in oil until onion is tender. Add meat; cook stir until meat is brown. Stir in stewed tomatoes, tomato paste, salt, oregano garlic powder. Simmer 10 minutes; add zucchini; cook, covered 10-15 minutes, until zucchini is tender-crisp. I bake this in the oven - prepare in the morning
