  • 24 ounces pomegranate juice
  • 10 ounces white chocolate lindt perugina chopped
  • 1 cup chilled heavy whipping cream
  • 3 large egg whites
  • 5 tablespoons powdered sugar
  • pomegranate seeds

Preparation

Step 1

1. boil pom juice in large sauce pan to 2/3 cup 20 minutes transfer to small bowl and chill( can be made 1 day ahead)
2.Stir choc and 1/2 cup cream in medium saucepan over very low heat until just melted. Transfer to large bowl cool 10 minutes.
3. Whisk remaining 1/2 cup cream in medium bowl till soft peaks form fold into choclate mixture in 2 additions.
4. Using electic mixer beat egg whites in another med bowl until very frothy. add powdered sugar beat until peaks form
5. fold egg white mixture into chocolatre mixture in 2 additions.
6Divide mousse into six glasses chill at least 1 hr
Drizzle with sauce and sprinke with pomegranate seeds
Can be made 1 day ahead cover and chill mousse glasses
