Ingredients
- "*" 3 Tbsp cold water
- "*" 1 envelope unflavored gelatin
- "*" 2 cups whipping cream
- "*" 1/2 cup Irish Creme (Baileys or like flavored liquor)
- "*" 1/2 cup sugar
- "*" 1/2 cup semi-sweet chocolate mini chips

Step 1
Combine water and gelatin in top of double-boiler and let it sit for 5 minutes. Place double boiler over low heat until gelatin is dissolved. Remove from heat and cool to room temperature.
Whip cream until soft peaks form. Gradually beat in gelatin mixture into whipping cream until stiff peaks form. Gradually add sugar and liquor and beat until well blended. Fold in chocolate chips and chill at least one hour before serving.
*For a different adult version, add Amaretto instead of Irish Creme and crushed almonds along with the chocolate chips.
