Ingredients

  • Pastry for 1 crust 9 inch pie
  • Pastry for lattice strips
  • 1 1/4 lbs fresh rhubarbs (4cups)
  • 3 eggs
  • 3 tbsp milk
  • 2 c sugar
  • 1/4 c flour
  • 3/4 tsp nutmeg
  • 1 tbsp butter

Preparation

Step 1

Line a 9 inch pie pan with the pastry. Cut the rhubarb into 1 inch pieces; arrange in pie shell.
Beat the eggs and milk, add sugar, flour, nutmeg and blend thoroughly. Pour egg mix over the rhubarb.
Dot with the butter and arrange lattice strips over top.
Bake 50 to 60 minutes at 400º or until nicely browned.
