Ingredients

  • 2 lbs Ocean Perch Filletws
  • 1/2 C Green Pepper - finely chopped
  • 2 Med. Onion - Finely chopped
  • 1 lg potatoe - diced
  • 1/2 lb sliced mushrooms
  • 1/3 C butter melted
  • 1 can corn
  • 2 cans cream of mushroom soup
  • 2 C Milk
  • 1/2 C White Wine
  • scant of salt
  • 1 Tsp Pepper
  • 2 oz pimento - finely cut

Preparation

Step 1

Remove skin from fish, cut into small pieces. Saute green pepper, onion, potatoe, and mushrooms in butter for about 8-10 minutes. Add fish and cook 10 minutes - stir often.

Combine corn, soup milk and wine in saute pan - heat and simmer 6 minutes. Stirr until smooth. Slowly add fish mixture. Stirring constantly till chowder is near boiling. Add salt and pepper and pimento. Hold just below boiling for 5 minutes.
