Creamed Spinach

Ingredients
- Fresh baby spinach, wilted, or frozen spinach, defrosted and squeezed dry
- 2-4 slices bacon, fried and crumbled, reserve 1-2 T bacon grease
- 1 small onion, diced
- 1-2 cloves garlic, diced – optional
- ¼ c cider vinegar
- ¾ c water
- ½ t salt
- 1 T butter
- 1 T bacon grease
- 1 T flour
- 1 egg, slightly beaten

Preparation
Step 1
Simmer onion, garlic, salt, vinegar, and water about 10 minutes. In a small bowl, mix together melted butter and bacon grease, flour, and egg. Ladle several tablespoons of the liquid mixture into the egg mixture to thin and temper. Then stir the egg mixture into the liquids, stirring and continuing to simmer until thickened. When ready to serve, pour the warm sauce, as needed, over the spinach. Top with sliced hardboiled egg and crumbled bacon.
