Asparagus Feta Fritata

Ingredients

  • 14 spears Asparagus
  • 1 teaspoon olive oil
  • 4 tablespoons scallions, chopped
  • 2 teaspoons garlic, minced
  • 1 dash salt and pepper
  • 6 eggs, well-beaten
  • Feta cheese, crumbled

Preparation

Step 1

Blanch 12 asparagus spears for 3 minutes. Refresh in cold water. Set aside.
In an oven-proof, nno-stick pan, saute on low heat for 2 miutes the olive oil, scallions, 2 minced, uncooked asparagus spears, garlic and salt and pepper. Add the eggs. Stir sightly and cook until eggs are partially set. Lay asparagus spears on top and dot with feta cheese. Bake in 350 oven for 6-8 minutes until eggs set.
