Tracy's Fantasic Farfalle Salad with sun-dried tomatoes and spinach

Ingredients
- Dressing:
- 500 g (1 Ib)farfalle (bow-tie) pasta
- 6 oz. sundried tomatoes sliced in strips (jarred tomatoes in oil are much better than dry ones if only dry are available try to soak for an hour or two in cold water)
- 3 spring onions
- 500 g (1 Ib) Fresh spinach, stalks trimmed and leaves shredded
- 4 tablespoons roasted pine nuts (roast until golden brown on cookie sheet in toaster or regular oven)
- 1 tablespoon chopped fresh oregano
- 1/2 cup olive oil (or if using jarred tomatoes use I/, cup olive oil and 1/4 cup of the tomatoe oil)
- 1 clove garlic (not bulb) - crushed
- 1 teaspoon chopped fresh red chili pepper
- 1/2 teaspoon salt

Preparation
Step 1
1. Cook pasta (al-dente). Drain ,rinse well under cold water. Transfer to large salad bowl.
2. Trim the spring onions and slice finely. Add to the pasta with tomatoes, spinach, pine nuts and oregano.
3. Combine dressing ingredients in small jar with lid. Shake well.
Pour over salad; toss well and serve immediately.
