Ingredients
- Dressing:
- 5 cups cooked chicken, cubed
- 16 oz. can pineapple chunks, drained
- 8 oz. can sliced water chestnuts, drained
- 1 cup green pepper, cut julienne style
- 1 cup seedless green grapes
- 1 cup seedless red grapes
- 4 oz. shredded cheddar cheese
- 3/4 cup salted cashews
- 1/2 cup celery, chopped
- 1/2 cup green onions, chopped
- 1/3 cup mayonnaise
- 1/3 cup plain yogurt
- 4 tsp. apple juice
- 1/4 - 1/2 tsp. salt

Step 1
In a large bowl, combine the salad ingredients. In a separate bowl, combine the dressing ingredients. Pour the dressing over the salad and toss to coat. Cover and refrigerate for at least 4 hours or until ready to serve.
