Ingredients
- Optional additions:
- 1 Tblspn butter
- ½ cup long grain brown rice
- 1 ¼ cups chicken broth
- ¼ tsp salt
- Pepper
- ¼ cup diced carrots
- ¼ cup rough chopped broccoli
- ¼ cup diced onion
- ¼ cup drain petite diced tomatoes
- ¼ cup frozen peas
- 4 - 6 thinly sliced white mushrooms
- Chopped fresh herbs, such as basil, flat leaf parsley, or cilantro

Preparation
Step 1
Select a medium size saucepan with a tight fitting lid. Over medium heat, heat the butter. When just bubbly, add the rice and optional ingredients (mushrooms, carrots, broccoli, onions, or tomatoes), if using. Stir 2-3 minutes, until the rice is lightly toasted.
Add the chicken broth and salt to taste, approximately ½ tsp. Bring to a boil. Then, reduce the heat, cover, and simmer about 30 - 45 minutes, until all of the water has been absorbed.
Remove from the heat, add frozen peas and fresh herbs (if using), cover, and let sit 10 minutes. Using a fork, fluff, season with salt and pepper to taste, and serve.
