  • 1 cup pineapple juice
  • 1/4 cup packed brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp white rum (or pineapple juice and 1/2 tsp vanilla)
  • 1 tbsp butter
  • Pinch ground nutmeg

Preparation

Step 1

In small saucepan, heat pineapple juice with brown sugar, stirring, until sugar is dissolved. Bring to a boil.

Combine cornstarch and rum until smooth; whisk into juice mixture and boil for 1 - 2 minutes until thickened and smooth.

Remove from heat. Stir in butter and nutmeg. Serve warm. Or let cool, cover and refrigerate for up to 2 days. Re-warm to serve.
