Ingredients

  • 2 Tbs unsalted butter
  • 2 Tbs olive oil
  • 4 cups (3 large) chopped yellow onions
  • 2 Tbs mild curry powder
  • 5 lbs Butternut squash (2 large)
  • 1 1/2 lbs sweet apples such as macintosh (4 apples)
  • 2 tsp Kosher salt
  • 1/2 tsp frshly ground black pepper
  • 2 cups water
  • 2 cups good apple cider or juice

Preparation

Step 1

Warm the butter, olive oil, onions and curry powder in a large stock pot over low heat for 15-20 minutes until the opnions are tender. Stir occasionally scrapingthe bottom of the pot.

Peel squash cut in half remove seeds. Cut into chunks. Peel and quarter the apples, cut into chunks.

Add squash, apples, salt, pepper and 2 cups water to the pot. Bring to ao boil, cover and cook over low heat for 30-40 minutes until are are soft. Process soup with immersion blender.

Add the cider and enough water to make the consistency you like. It should be sweet and thick.
