Ingredients
- 3/4 c sugar
- 1 1/2 c heavy cream
- 1 c hole milk
- 1 vanilla bean, seeds scraped and bean reserved
- 5 egg yolks
- 1/4 tsp salt

Step 1
Preheat oven to 300
Place six, 4 oz ramekins in a roasting pan and set aside. Put 1/2 c sugar into a medium suacepan over med heat. Cook, without stirring until sugar is caramelized and golden brown, about 3 minutes. Swirl pan to dissolve any unmelted sigar. Reduce heat
Put remaining 1/2 c cream intoa chilled bowl. Whisk until soft peaks form. Place a dollop of whipped cream on each pot. Serve
