Ingredients
- 1 cup bulgar wheat
- 3/4 cup peeled, seeded, finely diced cucumber
- 1/2 cup chopped fresh parsley
- 1 med. tomato, seeded and diced
- 1/4 cup finely chopped green onions
- 1/4 fresh lemon juice
- 3 tab. extra-virgin olive oil
- 2 tab. chopped fresh mint
- 2 tab. fresh cilantro
- 1/2 teas. salt
- 1/8 teas red pepper
- 1/8teas. grated lemon peel

Preparation
Step 1
Place bulgar in small bowl in cold water to cover by 1-inch; soak 1 hour.
Drain well, pressing out excess water.
Toss bulgar with remaining ingredients.
