Ingredients

  • 1 cup bulgar wheat
  • 3/4 cup peeled, seeded, finely diced cucumber
  • 1/2 cup chopped fresh parsley
  • 1 med. tomato, seeded and diced
  • 1/4 cup finely chopped green onions
  • 1/4 fresh lemon juice
  • 3 tab. extra-virgin olive oil
  • 2 tab. chopped fresh mint
  • 2 tab. fresh cilantro
  • 1/2 teas. salt
  • 1/8 teas red pepper
  • 1/8teas. grated lemon peel

Preparation

Step 1

Place bulgar in small bowl in cold water to cover by 1-inch; soak 1 hour.
Drain well, pressing out excess water.
Toss bulgar with remaining ingredients.
