Ingredients
- 2 big pkgs frozen peas (bags)
- 4 tsp. lemon juice
- 1/2 cup mayonnaise
- 2 tablespoons grated onion
- 2 tsp. dijon mustard (Coleman's Schillings dry mustard for example)
- 1 lb. crisp bacon
- salt & pepper to taste.

Preparation
Step 1
Partially thaw peas & then blanch (drop into boiling water) for 60 seconds with 2 teaspoons lemon juice.
Bring water to boil & then take out again.
Drain well and cool.
Mix together mayonnaise, grated onion, mustard and two teaspoons lemon juice, crumbled crisp bacon. Then fold in the cooled peas and season to taste with salt and pepper.
Chill & serve.
