Ingredients

  • 4 large green peppers
  • 1 cup cooked rice (I use brown rice)
  • 1 can black beans (drained)
  • 1 can corn
  • 1.5-2 tomatoes, diced
  • 1 onion
  • 1/4 tsp white pepper
  • 1.5 tsp salt
  • 1/4 tsp red pepper
  • 1.5 Tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • olive oil

Preparation

Step 1

Dice the onion and saute it in olive oil. Cut the tops off the green peppers and scoop out the insides. Mix all ingredients well and fill the peppers (you may have some filling left over; I haven't worked out the amounts yet. Makes a tasty salad, though!) Bake at 300 degrees for 30 minutes
