Turnips

Note: Amounts of all ingredients may be adjusted according to taste.
May be made 2-3 days before use and stored in the refrigerator
When ready to use, remove from refrigerator and allow to come to room temperature – dot w/butter, heat at 200º for one hour then raise temperature to 350º for about 30-45 min. Check center for temperature.

Ingredients
- 3-4 medium rutabagas (yellow turnip), peeled and diced
- 1 tsp ginger and/or 1 tsp nutmeg
- 8 tbs fresh orange juice
- ¼ lb butter
- salt & pepper to taste

Step 1
Cover the diced rutabaga with water and cook until tender
Drain and mash – stir in remaining ingredients
