Ingredients

  • 2 cups firmly packed fine graham cracker crumbs (about 24 square crackers) (1/3 third of the graham cracker box for single)
  • 1 pkg(6oz) semi-sweet chocolate pieces
  • 1/2 cup coarsely chopped nutmeats
  • 1 can (1 1/3 cups per can) Eagle Brand Sweetened Condensed Milk
  • Confectionary sugar

Preparation

Step 1

PREPARE PAN
8 X 8 X 2 for single batch
12 Y2 X 9 X 2 for triple batch
Grease the bottom and sides of the pan, then line the pan with waxed paper.
Grease the bottom and sides of the waxed paper.
PREPARE GRAHAM CRACKERS
The box of graham crackers comes with three (3) separately wrapped packages of about 24 squares each. One package makes a single batch. I usually use the entire box, which makes a triple batch.
I use a food processor to grind the graham crackers. A blender will work also. A rolling pin is the old slow method of getting graham cracker crumbs.
MIX
Mix together graham crackers crumbs, chocolate pieces and nutmeats.
Blend in condensed milk. Mix should become stiff.
Pour mix into pan and spread out evenly.
BAKING
Preheat over to 350 degrees
Bake in moderate over (350) until top is golden brown about 35-40 minutes single batch
45-50 minutes triple batch.
Do not over cook - cookies get hard, error on the moist side.
Use cake tester to check when cookies are done, tester comes out clean.
WHEN DONE
Put cookie sheet on top of pan and turn over. Remove cookies from pan immediately.
Remove wax paper immediately. Peal back slowly.
Cool.
When cookies are still a little warm:
Cut into small squares, bite size.
Roll in confectionery sugar (10X) (easier to cover in sugar when warm).
