This is a pure and simple recipe with loads of flavor. My husband ran out to the store for a bottle of wine, and when he got back, the pie was in the oven. Having only five ingredients, it is the easiest pie to make.

  • 4 cups chopped rhubarb
  • 1 1/3 cup sugar
  • 6 tbs flour
  • 1 tbs butter
  • 2 pie crusts

Step 1

Preheat oven 450*

Combine sugar and flour. Sprinkle 1/4 cup of mixture over pie pastry. Put all the rhubarb in the pie shell. Pour the rest of the sugar and flour mixture over the rhubarb. Dot with the butter. Take the remaining pie pastry and lattice over the top of the rhubarb and sprinkle with a little sugar.

Place in the lowest rack in oven. Bake 15 minutes. Reduce to 350* and continue baking for 40-45 minutes.
