Ingredients

  • 1 rack of lamb well trimmed of fat
  • 1 clove garlic peeled
  • 3 pats of butter
  • 1 onion quartered
  • 2 cloves of garlic unpeeled
  • 1 additional pat of butter
  • ½ cup dry Sherry

Preparation

Step 1

Preheat oven to 450 degrees. Soak the two cloves of unpeeled garlic in water for a few minutes. Melt the 3 pats of butter in the roasting pan and put in the 2 cloves of garlic along with the quatered onion. Place a quarter on the onion in each corner of the pan. Rub lamb with peeled clove of garlic. Place lamb meat side down in the roasting pan and salt and pepper the underside.
Roast for 15 minutes. Then turn the rack over, salt and pepper and roast for another 15 minutes (will be pink at this point) or to desired doneness.
Remove rack from pan and keep warm. Place roasting pan on a burner and melt additional pat of butter. Add Sherry and boil gently for a few minutes. Cut rack into chops and pour pan juices over each serving.
