Ingredients
- 12 tbs. butter, softened
- 3 tbs. lemon juice
- 5 tbs. fresh parsley, chopped, divided
- 12 Chicken breasts, boneless, skinless
- Salt and pepper
- 12 oz fresh Mozzarella, sliced
- 9 oz. smoked ham, chopped
- 1 tbs. garlic, chopped
- 1 tbs. fresh tarragon, chopped

Preparation
Step 1
Mix together butter, lemon juice, and 4 tbs. parsley until completely blended. Shape the butter into a log and wrap with plastic film. Freeze until firm, and slice into 12 slices.
Butterfly chicken breasts, cutting from the outside edge to the thicker center edge. Season inside and out with salt and pepper.
Place one slice mozzarella into each breast, and top mozzarella with ¾ oz. chopped ham, ¼ tsp. garlic, ¼ tsp. tarragon, and ¼ tsp. parsley.
Fold chicken over filing and secure edges with toothpicks. Grill breasts until golden brown and cooked through, about 8 minutes.
Top each breast with 1 slice of compound butter and slice into 6 pieces before serving.
