Ingredients

  • 4 ounces prosciutto cotto, cut in one thick slice
  • 1 tsp. each chopped sage and rosemary
  • 2 1/2 lbs. pork loin
  • salt and pepper
  • 1/4 cup olive oil
  • 2 tbs. butter
  • 2 Granny Smith Apples, washed, peeled, and roughly chopped

Step 1

Preheat oven to 375 degrees. Cut the prosciutto into strips and place in a bowl and combine with the herbs, and toss. Make slits in the pork and stud it with small pieces of the herb mixture.

Season with salt and pepper, then heat olive oil and sear the pork until golden. Roast 45 minutes, ore until done.

Melt the butter, add the apples and saute until soft; about 15 minutes. Transfer the mix to a blender with slat and pepper and puree. Remove the pork from the oven, let rest and serve with the puree.
