Ingredients

  • 9 C. cubed red potatoes (about 3 pounds)
  • 1/2 C. diced onions
  • 1/2 C. diced celery
  • 1/4 C. sweet pickle relish, drained
  • 3 hard-cooked large eggs, chopped
  • 1 garlic clove, minced
  • 3/4 C. low-fat sour cream
  • 1/3 C. fat free mayonnaise
  • 2 T. chopped fresh parsley
  • 1 t. dry mustard
  • 3/4 t. salt
  • 1/4 t. pepper

Preparation

Step 1

Place potatoes in Dutch oven; cover with water and bring to boil. Cook 8 minutes or until tender. Drain; place in large bowl. Add onion and next 4 ingredients; toss gently.

Combine sour cream and next 5 ingredients in a bowl; stir well. Pour over potato salad; toss gently to coat. Cover and chill.
