Ingredients
- 9 C. cubed red potatoes (about 3 pounds)
- 1/2 C. diced onions
- 1/2 C. diced celery
- 1/4 C. sweet pickle relish, drained
- 3 hard-cooked large eggs, chopped
- 1 garlic clove, minced
- 3/4 C. low-fat sour cream
- 1/3 C. fat free mayonnaise
- 2 T. chopped fresh parsley
- 1 t. dry mustard
- 3/4 t. salt
- 1/4 t. pepper

Preparation
Step 1
Place potatoes in Dutch oven; cover with water and bring to boil. Cook 8 minutes or until tender. Drain; place in large bowl. Add onion and next 4 ingredients; toss gently.
Combine sour cream and next 5 ingredients in a bowl; stir well. Pour over potato salad; toss gently to coat. Cover and chill.
