Ingredients
- 4 c cooked black-eyed peas
- 1 red bell peper, cored, seeded and diced
- 2 green onions, sliced
- 1/4 c olive oil
- Jalapeno peppers
- 1 T Dijon mustard
- 2 T lemon juice
- 2 cloves garlic minced
- 1 t salt
- 1 t dried thyme leaves
- 1 t sugar
- 1/4 t Tabasco sauce
- Freshly ground black peper

Step 1
Place all ingredients in a large bowl. Toss until well blended. Let stand several hours in fridge.
