Ingredients

  • 5 cans (20 ounces each) pineapple chunks plus 1 can (8 ounces) pineapple chunks
  • 4 packages (5.1 ounces each) instant vanilla pudding mix
  • 8 cans (15 ounces each) mandarin oranges
  • 10 medium red apples, chopped

Preparation

Step 1

Drain pineapple, reserving juice; set pineapple aside. Add enough water to juice to make 6 cups. Place pudding in a large bowl; stir in pineapple juice until thickened, about 4-6 minutes. Fold in the oranges, apples and reserved pineapple.

Pour about 8 cups each into four greased 13-in. x 9-in. x 2-in. pans. Chill until set.

Yield: 64 servings (1/2 cup).
