  • 15 graham crackers
  • ¼ cup butter
  • 4 eggs, separated
  • 3 (8 oz) cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 pint sour cream

Step 1

Set oven to 350 and grease bottom and sides of a 9 x 3 in spring form pan. Roll graham crackers till fine. Melt butter and combine with 12 of the 15 crackers. Cover bottom of pan with mixture. Beat egg whites stiff and set aside. In large bowl, combine cream cheese, egg yolks, ¾ cup sugar and vanilla. Beat until smooth. Fold in egg whites. Place mixture in pan on top of cracker crumbs and bake for 40 – 50 minutes or until slightly browned. Remove from oven. Mix the sour cram and the remaining sugar and pour on top of the cake. Sprinkle with the remaining crumbs on top and return to the oven at 475 for 5 minutes. Remove from the oven and cool. When cool , add your favorite topping and place in refrigerator for at least 12 hours before serving.
