SAUSAGE AND SWEET POTATO SMASH

Ingredients
- 4 large sweet potatoes, peeled and quartered
- 1-pound package sausage meat
- 1 large yellow onion, chopped
- 1 T fresh thyme leaves
- Salt and ground black pepper, to taste

Preparation
Step 1
Bring a large pot of salted water to a boil. Add the sweet potatoes and cook until tende, about 25 minutes.
In a large skillet over medium-high heat, brown the sausage meat, breaking it up as it cooks. Drain off any excess oil, then add the onion and continue cooking until the onion is soft and starting to brown, about 6 minutes. Remove the skillet from the heat and add the thyme.
When the sweet potatoes are cooked, drain them well and add to the sausage mixture. Smash them together and season with salt and pepper.
