Ingredients
- 1 ½ cups pine nuts
- 1 cup sugar
- ¼ cup almond paste
- 1 ½ tsp. grated lemon peel
- ¾ tsp. vanilla
- 3 egg whites
- 1 1/3 cup flour
- ½ tsp. baking powder
- ¼ tsp. salt
- ½ cup icing sugar

Step 1
Preheat oven to 350 degrees. Blend ¾ cup pine nuts and the next 4 ingredients into a processor and pulse until a crumbly mix forms. Transfer mix to a bowl and add the egg whites, beat until smooth. Whisk the flour and baking powder together. Add the flour mix to the nut mix and beat until smooth (the dough will be soft and sticky). Place the remaining ¾ cup pine nuts in a shallow bowl. Spoon dough into the nuts, coating 1 side, bake until golden (approximately 20 minutes), then cool and dust with sugar.
