Weight Watchers Shepherd's Pie

A slightly modified version of Weight Watchers Shepherd's pie.

Ingredients
- 3 large potatoes, cut in chunks
- 1 t olive oil
- 1 shallot, chopped
- 2 minced garlic cloves
- 1 lb lean ground beef
- 1-14 1/2 oz can diced tomatoes
- 1 C frozen peas
- 1 t salt
- 1/4 t pepper
- 1/2 t oregano
- 1/2 t thyme
- 1/2 C plain, nonfat yogurt
- 1 t butter

Preparation
Step 1
Oven to 375 degrees F.
Cook potatoes in water until tender.
Meanwhile, heat a large nonstick skillet. Saute the garlic and shallot in oil until softened, 3-5 minutes. Add beef and brown, about 5 minutes. Drain all fat from the skillet.
Stir in tomatoes, peas, 1/2 t salt, 1/8 t pepper, oregano and thyme and bring to a boil. Reduce heat and simmer, stirring occasionally, about 10 minutes.
Drain the potatoes and return to saucepan. Mash in yogurt, butter and remainder of salt and pepper.
Spread the beef mixutre in a pie plate. Spread the mashed potatoes evenly over the top.
Bake until the potatoes begin to brown and the filling is bubbly, about 20 minutes. Let stand 10 minutes before serving.
