Ingredients

  • 4 Cups mixed fresh vegetables (we used red bell peppers, whole mushrooms, asparagus, green and yellow squash)
  • 2-3 TB. olive oil
  • 2 tsp. lemon juice or red wine vinegar
  • 1 tsp. BBQ 3000

Preparation

Step 1

Wash the veggies and remove stem ends, then cut big enough so they won't fall through the grill rack, or use a grill basket that will keep them safely inside. Toss with olive oil, lemon juice or vinegar and BBQ 3000. Let stand for 20 minutes or so. Grill over medium heat, turning at least once. Some veggies take more time than others; if you experiment a bit you'll figure out how long each takes. Squash and asparagus take 5 minutes or less, mushrooms and large hunks of peppers can take up to 10.
