Ingredients

  • 1 lb. boneless, skinless chicken breasts, cut into 1" pieces
  • 1/2 tea. salt
  • 1 can (1/45 oz) pumpkin puree
  • 1 can (14.5 oz) stewed tomatoes
  • 1/2 cup peanut butter
  • 1/2 cup water
  • 1/2 tea. ground coriander

Step 1

Sprinkler chicken with 1/2 tea. salt. Spray a 6 qt. saucepot with cooking spray, heat to medium-high. Add chicken and cook 3-4 minutes or until browned all over.

Add pumpkin, stewed tomatoes, peanut butter, water and coriander; break up tomatoes with spoon. Heat to boiling on high. Reduce heat to medium; simmer 5 minutes or until chicken is no longer pink in center.

Serves 4
