Ingredients
- 8 slices crusty firm Italian bread
- 2 cloves garlic
- 4 medium ripe tomatoes, cored and diced
- 1/2 cup slivered basil leaves
- Salt and pepper

Step 1
Preheat the broiler and grill both sides of the bread for 3 minutes, or until golen, remove from the oven and rub with the garlic and oil.
Combine the tomatoes, basil and salt and pepper. Top the bread slices with the tomato mixture and serve immediately.
*For bruschetta with mozzarella, prepare the bread as listed and top each slice with mozzarella cheese. Broil just until the cheese is bubbly and then top with fresh diced tomatoes and chopped fresh oregano.
