- 2 large Cucumbers, peeled, seeded, finely grated
- 2 Pints Sour Cream
- Coarse Salt
- 1/2 C. Fresh Chopped Herbs*
- Fresh Ground Pepper
- *Use herbs such as parsley, chives, tarragon, mint or dill

Step 1
In a colander, squeeze out excess liquid from the cucumbers. Mix with sour cream and herbs; season with salt and pepper.
Refrigerate until ready to use.
